    Ingredients
    • INGREDIENTS FOR SAUCE
    • 4 tbsp Soy sauce
    • 4 tbsp Rice vinegar
    • 4 tbsp PB2
    • 2 tsp Sriracha
    • 1/2 tsp Garlic Powder
    • 2 tsp Peanut oil
    • Cracked pepper
    • 1 tsp Curry powder
    • INGREDIENTS for the rest of the dish
    • 1 Whole egg
    • 2 Egg whites
    • 1 Salt and pepper to taste
    • 1/2 Large onion chopped
    • 1/2 cup Chopped scallions
    • 1/2 cup Shredded carrots
    • 1/2 cup Bean sprouts optional
    • Chopped fresh cilantro to taste
    • 3 Mini red pepper sliced
    • 3 tbsp Crushed peanuts (to sprinkle at the end)
    • 1/2 Lme cut in two optional, to serve on the side

    • 1 Whole egg
    • 2 Egg whites
    • 1 Salt and pepper to taste
    • 1/2 Large onion chopped

    • Chopped fresh cilantro to taste
    • 3 Mini red pepper sliced
    • 3 tbsp Crushed peanuts (to sprinkle at the end)
    • 1/2 Lme cut in two optional, to serve on the side

      Instructions
      1. Remove Palmini linguini from can and rinse well. Let soak in choice of milk for 30 minutes.
      2. While that soaks, make the peaut sauce by just mixing together all the ingredients in a bowl. Set aside.
      3. Boil chicken breasts in boiling water and salt for about 10-15 minutes (or until cooked through).
      4. While chicken cools, chop cilantro and prepare veggies
      5. Scramble 1 egg and 2 egg whites with salt and pepper. Set aside.
      6. Sauté onion and garlic in avocado oil spray until onion is translucent
      7. Add rest of veggies. Sprinkle with a little salt and pepper. Add chopped cilantro and combine.
      8. Add shredded chicken and eggs to the sauteed veggies. Pour about 1/3 of the sauce and combine well
      9. Add Palmini linguine and a bit more of the sauce. Combine all well. Let cook down a couple minutes.
      10. Serve and top with crushed peanuts, chopped scallions, and chopped cilantro.
