Breakfast Lasagna
INGREDIENTS
- 1 package @palmini_official lasagna sheets
- 1 plant based sausage
- Any veggies you like – I used red onion, tomato, mushrooms
Hollandaise Sauce Ingredients:
- 1/4 cup Cashews (soaked in boiling water for 30mins)
- 2 tbsp Nutritional Yeast
- 1/2 Tbsp Lemon Juice
- 1/2 tsp apple cider vinegar
- 1/4 cup Broth/water/unsweetened milk
- Pinch of Turmeric
- 2 Tsp Dijon Mustard
- 1/2 tsp each Garlic & Onion Powder
- Pinch of sea salt & hot sauce
INSTRUCTIONS
- Grease two ramekins or a mini pan/one loaf pan. Rinse the palmini sheets & let dry. Blend the sauce ingredients together, taste & adjust as needed. Chop the veg & cook/season the protein if needed (my sausage was already seasoned & I just had to chop it up).
- Layer as followed: Lasagna sheets, half the veggie & protein mix, 1/3 of the sauce. Lasagna, the rest of the veg & protein mix, 1/3 sauce, then remaining lasagna sheets. Top with remaining sauce. If you’re feeling fancy, sprinkle some cheese on top 😋
- Bake at 400F for 20-30 mins (I use a tiny oven so times may vary!) but once it’s golden & starting to crisp around the edges you should be good! Top with green onion, avocado, & more hot sauce 😘👌
