Creamy Coconut Rice
INGREDIENTS
Ingredients for Salmon:
- Salmon Fillet
- 1 tbsp maple syrup
- 1 tbsp coconut aminos
- 1 tsp sesame oil
- Sesame seeds
- Salt, pepper to taste
Ingredients for Coconut Rice:
- 1 bag of Palmini rice
- 1 tbsp dairy free butter
- 4 tbsp softened coconut cream, the top part
- 4 tbsp chopped scallions
- Handful of chopped cilantro
- Squeeze of lime juice
- Salt, pepper to taste
INSTRUCTIONS
Instructions for Salmon:

- In a small mixing bowl, combine maple syrup, coconut aminos, sesame oil, sesame seeds, and salt and pepper (can double marinade for larger fillets)
- Pour the dressing over the salmon, then gently rub all over the top of the fish. Let marinate in the refrigerator for a few minutes to absorb the flavor.
- Place salmon into an air fryer, skin side down, and cook at 400 for 8-12 minutes, depending on the size of your fillet.
Instructions for Coconut Rice
- Drain and rinse your palmini rice according to directions on the package.
- In a saucepan on medium heat, saute scallions in dairy free butter until slightly translucent, then add in your rice and saute together.
- Add in your coconut cream, stirring well, and let simmer.
- Add in lime juice, chopped cilantro, salt, pepper, and serve!
