INGREDIENTS

Ingredients for Salmon:

  • Salmon Fillet
  • 1 tbsp maple syrup
  • 1 tbsp coconut aminos
  • 1 tsp sesame oil
  • Sesame seeds
  • Salt, pepper to taste

Ingredients for Coconut Rice:

  •  1 bag of Palmini rice
  • 1 tbsp dairy free butter
  • 4 tbsp softened coconut cream, the top part
  • 4 tbsp chopped scallions
  • Handful of chopped cilantro
  • Squeeze of lime juice
  • Salt, pepper to taste

INSTRUCTIONS

Instructions for Salmon:

    1. In a small mixing bowl, combine maple syrup, coconut aminos, sesame oil, sesame seeds, and salt and pepper (can double marinade for larger fillets)
    2. Pour the dressing over the salmon, then gently rub all over the top of the fish. Let marinate in the refrigerator for a few minutes to absorb the flavor.
    3. Place salmon into an air fryer, skin side down, and cook at 400 for 8-12 minutes, depending on the size of your fillet.

Instructions for Coconut Rice

  1.  Drain and rinse your palmini rice according to directions on the package.
  2. In a saucepan on medium heat, saute scallions in dairy free butter until slightly translucent, then add in your rice and saute together.
  3. Add in your coconut cream, stirring well, and let simmer.
  4. Add in lime juice, chopped cilantro, salt, pepper, and serve!
