Grain Free Spicy Tuna Crispy “Rice”

INGREDIENTS

For the spicy tuna:

  • 1 can of tuna
  • 2-3 tbsp avocado oil mayo
  • Few tbsp of dairy free buffalo sauce or hot sauce
  • ½ tsp sesame oil
  • Salt, pepper

For the grain-free crispy rice:

  • 1 pack of Palmini Rice
  • ½ tsp sesame oil
  • ¼ tsp apple cider vinegar
  • 2 tsp coconut aminos
  • 1 egg
  • 5 tbsp almond flour

Garnish:

  • Scallions
  • Sesame seeds
  • Coconut aminos for dipping

INSTRUCTIONS

  1. In one bowl, mix together your spicy tuna ingredients and let sit in the fridge until ready to assemble.
  2. Drain and rinse your palmini rice, and saute in a pan on medium heat for a few minutes. Let cool, pat dry, and squeeze with a paper towel to get out as much liquid as possible.
  3. In a bowl, combine your palmini rice with sesame oil, coconut aminos, 1 egg, and 5 tbsp of almond flour.
  4. Spoon the mixture onto a parchment lined and press down to form into a square shape, making sure it’s about 1 inch thick.
  5. Freeze until hard, and then cut into rectangles.
  6. Spray your air fryer with avocado oil and place your crispy rice rectangles inside. Air fry at 400 for a few minutes until golden brown, flipping halfway through.
  7. Top your crispy rice with your spicy tuna mixture, chopped scallions, sesame seeds, and serve with coconut aminos!
