Leftover Thanksgiving Rice

Recipe: Makes 6 servings


  • 1 can of Palmini Rice
  • 1/4 cup dried cranberries
  • 1/2 cup mixed greens
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1 tsp pepper
  • 1/4 cup crush pecans


  1. Drain and rinse Palmini rice.
  2. Heat 1 Tbsp of avocado oil in a non-stick pan then add in Palmini rice.
  3. Then, add in the remainder of the ingredients and mix until well incorporated and heated all the way through. About 3-5 minutes.
  4. Top with additional cranberries and enjoy!
