Palmini Fried Rice
INGREDIENTS
- 2 Tbsp coconut oil
- 1/4 cup diced carrots
- 2 Tbsp diced white onions
- 1 Tbsp minced garlic
- 1/4 cup peas
- 1 egg
- 1 Tbsp soy sauce
- Green onion for topping
INSTRUCTIONS
Stary by sauteing onion and garlic in coconut oil for 1-2 minutes. Then, add in carrots and peas. Allow to simmer for about 3 minutes. Then, add in scrambled egg. Mix all together, then add in drained and rinsed palmini rice. Season with salt and pepper and soy sauce. Serve with chopped green onions!

This recipe was surprisingly good – we’ve tired of trying to make riced cauliflower be good (for us, it’s just not)…We were cautiously optimistic about Palmini rice since we’ve enjoyed the various pastas; and this recipe turned out really well…This is leaps and bounds better than cauliflower fried rice for us…It’s nearly as good as rice, which is saying a lot for us…
