Palmini Latkes
Ingredients
- 1 Can Palmini (I used about 2/3 of a can)
- 3 Tbsp Egg Whites
- 1 Tbsp Minced Onion
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Black Pepper
Instructions
- Boil Palmini until preferred texture.
- In a bowl, combine egg whites, minced onion and seasonings.
- Add the Palmini and let it soak in the mixture for several minutes.
- Form three Latkes in a heated pan.
- Evenly distribute the egg white wash over the Latkes to help them form. Let each side brown before flipping.
- **Option- top the latkes with applesauce and greek yogurt (healthier swap for sour cream)
