1 Can Palmini (I used about 2/3 of a can)
3 Tbsp Egg Whites
1 Tbsp Minced Onion
1/2 Tsp Garlic Powder
1/2 Tsp Black Pepper
Boil Palmini until preferred texture.
In a bowl, combine egg whites, minced onion and seasonings.
Add the Palmini and let it soak in the mixture for several minutes.
Form three Latkes in a heated pan.
Evenly distribute the egg white wash over the Latkes to help them form. Let each side brown before flipping.
**Option- top the latkes with applesauce and greek yogurt (healthier swap for sour cream)
