Plant-based lentil spaghetti sauce and Palmini

INGREDIENTS
- 1 onion
- 1.5 cups mushrooms
- 1/2 red bell pepper
- 1 cup lentils
- 2 cups tomato sauce (I love Rao’s Homemade)
- 1 tbsp olive oil
- oregano
- sea salt
INSTRUCTIONS
- Dice the onion, mushrooms and bell pepper
- Add the olive oil to a pot and sauté the vegetables over medium heat for about 10 minutes
- Reduce the heat and add tomato sauce, lentils sea salt & oregano
- Cover and let it simmer for about 15-20 minutes (until the lentils are cooked)
- Served over @palmini_pasta and top with basil, nutritional yeast, vegan parmesan, or whatever your heart desires!
