Plant-based lentil spaghetti sauce and Palmini

INGREDIENTS

  • 1 onion
  • 1.5 cups mushrooms
  • 1/2 red bell pepper
  • 1 cup lentils
  • 2 cups tomato sauce (I love Rao’s Homemade)
  • 1 tbsp olive oil
  • oregano
  • sea salt

INSTRUCTIONS

  1. Dice the onion, mushrooms and bell pepper
  2. Add the olive oil to a pot and sauté the vegetables over medium heat for about 10 minutes
  3. Reduce the heat and add tomato sauce, lentils sea salt & oregano
  4. Cover and let it simmer for about 15-20 minutes (until the lentils are cooked)
  5. Served over @palmini_pasta and top with basil, nutritional yeast, vegan parmesan, or whatever your heart desires!
