Start by sautéing the onion & ginger in some water (or oil), then once soft add the curry paste & stock (turn down the heat so it doesn’t evaporate too much)
Meanwhile, boil some water & cook the noodles
Add the peas & pepper in with the stock in the last few mins before the noodles are cooked, then add the drained noodles to the soup
Stir through the lime & serve with the veggie burger!
