INGREDIENTS

  • small red onion, diced (or 1/2 a large one)
  • fresh ginger, grated
  • 1 tbsp red thai curry paste (ensure vegan)
  • 1 veg stock cube + 500ml water
  • 1 Palmini Angel hair, washed & boiled 8 mins
  • 1/2 cup frozen peas
  • 2/3 red pepper, chopped
  • 1/2 lime, squeezed
  • 1 veggie burger (i went for a mushroom burger!)

INSTRUCTIONS

  1. Start by sautéing the onion & ginger in some water (or oil), then once soft add the curry paste & stock (turn down the heat so it doesn’t evaporate too much)
  2. Meanwhile, boil some water & cook the noodles
  3. Add the peas & pepper in with the stock in the last few mins before the noodles are cooked, then add the drained noodles to the soup
  4. Stir through the lime & serve with the veggie burger!
