1 can Palmini Pasta
1 tsp Miced garlic
1 cup Cherry tomates
3/4 cup Chopped basil
1/4 cup Pine nuts
2 tbs Lemon juice
1/4 cup Olive oil
Salt and pepper to taste
Blend avocado, lemon juice, basil,garlic, salt, and black pepper in a food processor until smooth. Add olive oil and pulse until creamy
Combine avocado pesto with a linguine heart of palm pasta and cherry tomates
Season with salt and pepper to taste.
Use immediately or keep, refrigerated, for up to 2 hours.
