Palmini Rice Latkes
INGREDIENTS
- 1 can of Palmini rice
- 1 Large egg
- 2 tbs zathar tahini (or any flavor)
- 3 tbs Zen basil seeds (or chia seeds)
- Spices: salt & pepper to taste, you may add cumin & paprika for more flavor
INSTRUCTIONS
- Preheat oven to 375f
- In a medium mixing bowl whisk egg with tahini and sprinkle spices to your taste, mix well
- Add Palmini rice & Zen basil seeds
- Let the seeds soak for 5-7 minutes, the batter will be in a perfect consistency. Not too liquid
- Spray your parchment paper and it’s time to pour the batter into latkes, I used a spoon and ring mold for the round shape, but they will be beautiful even with just a spoon, bake for 5-7 minutes flip the latkes and bake for 5-7 minutes longer, until they get beautiful golden crunch
- I love serving it with any of our tahini as is from the jar, specially the zathar & spicy, enjoy, happy Hanukkah
