Vegan Palmini Poke Bowl
INGREDIENTS
𝗧𝗛𝗘 𝗪𝗔𝗧𝗘𝗥𝗠𝗘𝗟𝗢𝗡 𝗧𝗨𝗡𝗔:
- 100g watermelon, cubed
- 1-2 tbsp liquid aminos
- 1/2 lime, juiced
- 1 clove garlic, minced
- 1 tsp sesame oil
- 1/2 tbsp mirin
𝗢𝗧𝗛𝗘𝗥 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦:
- Palmini Rice
- carrots
- radishes
- cucumbers
- avocado
- baby kale
- sesame seeds
- spicy vegan mayo sauce
INSTRUCTIONS
- Combine all ingredients in a small sealable container. Refrigerate for an hour or overnight, if you want.
- Place watermelon (reserving marinade for later) on a lined baking tray and roast for 1.5 hours at 300. Check on them and rotate every so often.
- In the meantime, prep other ingredients.
- Rinse Palmini rice and gently heat in a frying pan with a little of your reserved watermelon marinade.
- Assemble bowl as you please with any and all toppings you like. Enjoy!
