Cauliflower steak with chimichurri

INGREDIENTS

  • 1 large head cauliflower
  • 1tbsp olive oil
  • 1/2tsp paprika
  • 1/2tsp chilli flakes
  • Salt/pepper
  • 1tbsp nutritional yeast
  • Cooked Palmini Rice

Chimmichurri sauce

  • 1/2c packed cilantro
  • 1c parsley
  • 3 garlic cloves
  • 2 tbsp lime juice
  • 1/2tsp chilli flakes
  • 2tbsp olive oil
  • 1/4 avocado
  • Salt/pepper
  • ~2 tbsp water to thin

INSTRUCTIONS

  1. Preheat oven to 400F and line a baking sheet with parchment paper
  2. Carefully remove leaves from cauliflower and slice lengthwise into two pieces. Then slice into 1inch “steaks”, ensuring each has stem at the bottom to keep heads in tact
  3. Mix together paprika, chilli flakes, salt/pepper & olive oil in a small bowl. Brush onto each side of cauliflower steaks. Then spray each side with cooking spray
  4. Bake for 20mins, then carefully flip each steak over. Sprinkle on nutritional yeast and bake for another 20mins
  5. Chimichurri sauce: add all ingredients except water to a food processor and blend until completely smooth. Add water to thin as needed
  6. Drizzle sauce on top of cauliflower steaks and garnish with fresh parsley. Serve with Palmini Rice and enjoy!👌🏼
