Cauliflower steak with chimichurri

INGREDIENTS
- 1 large head cauliflower
- 1tbsp olive oil
- 1/2tsp paprika
- 1/2tsp chilli flakes
- Salt/pepper
- 1tbsp nutritional yeast
- Cooked Palmini Rice
Chimmichurri sauce
- 1/2c packed cilantro
- 1c parsley
- 3 garlic cloves
- 2 tbsp lime juice
- 1/2tsp chilli flakes
- 2tbsp olive oil
- 1/4 avocado
- Salt/pepper
- ~2 tbsp water to thin
INSTRUCTIONS
- Preheat oven to 400F and line a baking sheet with parchment paper
- Carefully remove leaves from cauliflower and slice lengthwise into two pieces. Then slice into 1inch “steaks”, ensuring each has stem at the bottom to keep heads in tact
- Mix together paprika, chilli flakes, salt/pepper & olive oil in a small bowl. Brush onto each side of cauliflower steaks. Then spray each side with cooking spray
- Bake for 20mins, then carefully flip each steak over. Sprinkle on nutritional yeast and bake for another 20mins
- Chimichurri sauce: add all ingredients except water to a food processor and blend until completely smooth. Add water to thin as needed
- Drizzle sauce on top of cauliflower steaks and garnish with fresh parsley. Serve with Palmini Rice and enjoy!👌🏼
