- Palmini linguine
- 1 tbsp sesame or olive oil
- 1 clove garlic, minced
- 1 egg (can omit to make vegan)
- 2 tbsp coconut aminos
- 1 tbsp fresh lime juice
- 1 tbsp rice vinegar (can omit and sub 2 tbsp lime juice instead)
- 2 tbsp coconut sugar
- 1 tsp peanut butter
- 1 tsp arrowroot powder (or thickener)
- dash crushed red pepper flakes
- 3 scallions, sliced
- 1/4 c peanuts, crushed
- lime wedge, for garnish
- ADD: protein & veggies of choice! I used baked tofu, broccoli, carrots & red bell peppers
- In a pan over medium heat, saute minced garlic and sesame oil.
- Add in egg, and scramble until cooked.
- Add in veggies of choice and saute for a few minutes.
- In separate bowl, combine sauce ingredients (coconut aminos, lime juice, rice vinegar, coconut sugar, peanut butter, and red pepper flakes).
- Add Palmini linguine and sauce into pan with veggies & scrambled egg. Mix well.
- 6.Add in cooked protein of choice.
- Add in arrowroot powder, to thicken.
- Remove from heat, plate, and garnish with scallions, peanuts & lime wedge.
- Enjoy!
