INGREDIENTS

  • Palmini linguine
  • 1 tbsp sesame or olive oil
  • 1 clove garlic, minced
  • 1 egg (can omit to make vegan)
  • 2 tbsp coconut aminos
  • 1 tbsp fresh lime juice
  • 1 tbsp rice vinegar (can omit and sub 2 tbsp lime juice instead)
  • 2 tbsp coconut sugar
  • 1 tsp peanut butter
  • 1 tsp arrowroot powder (or thickener)
  • dash crushed red pepper flakes
  • 3 scallions, sliced
  • 1/4 c peanuts, crushed
  • lime wedge, for garnish
  • ADD: protein & veggies of choice! I used baked tofu, broccoli, carrots & red bell peppers

INSTRUCTIONS

  1. In a pan over medium heat, saute minced garlic and sesame oil.
  2. Add in egg, and scramble until cooked.
  3. Add in veggies of choice and saute for a few minutes.
  4. In separate bowl, combine sauce ingredients (coconut aminos, lime juice, rice vinegar, coconut sugar, peanut butter, and red pepper flakes).
  5. Add Palmini linguine and sauce into pan with veggies & scrambled egg. Mix well.
  6. 6.Add in cooked protein of choice.
  7. Add in arrowroot powder, to thicken.
  8. Remove from heat, plate, and garnish with scallions, peanuts & lime wedge.
  9. Enjoy!
