  • Palmini Linguine or Palmini Angel Hair
  • Chicken
  • ¼ cup pine nuts
  • 2 cups fresh basil leaves, packed
  • ½ parmesan cheese, store bought shredded or ¾ cup freshly grated parmesan
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 garlic clove
  • 6 tbsp. extra virgin olive oil


  1. Preheat small skillet over medium heat (no oil). Add pine nuts and toast until light brown. Immediately remove and let cool slightly
  2. Place all ingredients except olive oil in food processor or blender.
  3. Blitz until finely chopped
  4. With the motor running, slowly pour oil in. Blitz until smooth adding a touch of extra oil (or water) if required to help blitz
  5. Season and cook chicken.
  6. Rinse and drain Palmini
  7. Add Palmini and chicken to the pesto sauce and mix together.
  8. Enjoy!
