Red Pepper Sauce Palmini
INGREDIENTS
- 12 oz jar roasted red peppers (drained)
- 1/4 c fresh basil & parsley, chopped (use whatever herbs you have or just omit!)
- 1/4 c extra virgin olive oil
- 1 shallot (chopped)
- 2 cloves garlic (chopped)
- 1 tbsp lemon juice (1/2 lemon)
- sprinkle of paprika, salt + pepper
- Palmini Linguine
INSTRUCTIONS
COMBINE all ingredients in a high-speed blender. BLEND for about one minute, or until creamy. POUR over Palmini Linguine. ADD in fresh cherry tomatoes & basil. OPTIONAL: SPRINKLE crushed red pepper (and/or cheese). ENJOY!
