INGREDIENTS: 1 package Palmini linguini, drained - 1 cup finely chopped onion - 4 oz. mushrooms, sliced - 1 tbsp oil - 1 tsp kosher salt - 3/4 package extra firm or super firm tofu, drained, pressed dry with towels and cut into 1 cm cubes - 1.5 bell peppers, chopped - 3 garlic cloves, minced - 1 cup coconut milk - 4 tbsp red curry paste - 1 tbsp ginger paste - 1 tsp garlic powder - 1/2 tsp curry powder - 1 to 3 tsp sambal oelek or chili garlic sauce - 1 cup vegetable broth - Juice of lemon or lime - 1/3 cup sliced cherry or grape tomatoes - 1 to 2 tbsp chopped cilantro - 1 to 2 tbsp sliced scallions

INGREDIENTS: 12 oz jar roasted red peppers (drained) - 1/4 c fresh basil & parsley, chopped (use whatever herbs you have or just omit!) - 1/4 c extra virgin olive oil - 1 shallot (chopped) - 2 cloves garlic (chopped) - 1 tbsp lemon juice (1/2 lemon) - Sprinkle of paprika, salt + pepper - Palmini Linguine

INGREDIENTS: Palmini Pad Thai - 1 can palmini pasta - 2 cups slaw mix - 1.5 cups red cabbage, very thinly sliced - 1 cup romaine or kale, very thinly sliced - 1 carrot, thinly sliced / julienned/ spiralized - 1 zucchini, thinly sliced / julienned/ spiralized - 1 bell pepper, very thinly sliced - 1/2 cup green onions - handful basil, minced - Optional topper: toasted cashews, chopped

INGREDIENTS: 1 can Palmini - 1-2 chicken cutlets – thinly sliced - 1/2 pepper – thinly sliced - 1/2 cup shredded carrots - 1/2 cup shredded cabbage - Sauce: 1/2 low sodium soy sauce - 1 tsp sesame oil - 1 garlic clove – minced - 1tsp ginger – minced - 1 tbsp cornstarch

INGREDIENTS: Palmini linguine - 1 tbsp sesame or olive oil - 1 clove garlic, minced - 1 egg (can omit to make vegan) - 2 tbsp coconut aminos - 1 tbsp fresh lime juice - 1 tbsp rice vinegar (can omit and sub 2 tbsp lime juice instead) - 2 tbsp coconut sugar - 1 tsp peanut butter - 1 tsp arrowroot powder (or thickener) - dash crushed red pepper flakes - 3 scallions, sliced - 1/4 c peanuts, crushed - lime wedge, for garnish - ADD: protein & veggies of choice! I used baked tofu, broccoli, carrots & red bell peppers
